PRODUCTION PROCESS . . .
Wild West buys only premium, certified eggs, and feed containing only the highest quality ingredients
from the best suppliers to produce its steelhead
products.
Steelhead eggs are incubated
in Wild West's independently owned and operated hatchery to produce
fingerlings, which are then transferred to growing cages in Lake
Diefenbaker. Lake Diefenbaker provides a large source of high-quality,
mountain-fed water, which creates an optimum environment for producing
healthy and nutritious steelhead trout.
Both the fish and their environment are monitored regularly during the production process to ensure they meet strict quality standards. These measures are part of our commitment to providing a nutritious product, in an environmentally responsible manner.
Efficient at gaining
weight, steelhead can put on a kilo of weight with just 1.2 kilos of
feed. Once our fish reach optimum
weights, ranging between 2 and 6 pounds, they are harvested into an ice water slurry, to immediately begin the chilling process, and are delivered to the processing plant just minutes after leaving the water.

HACCP approved processing facility is located on site to ensures optimum freshness and the highest quality.
Once inside the plant, our qualified QMP (Quality Management Plan) staff ensure the product is handled and packaged to specifications that meet and exceed the
Canadian Food Inspection Agency's (CFIA) stringent guidelines for quality and safety.
